Mix Veg Recipe ; Recipe for mix veg

Ingredients for Mix Veg

Potato(chopped)                                     1 (large)

Carrot(chopped)                                     1 (medium)

Capsicum(chopped)                               1 (small)

Cauliflower (chopped)                           50  gram

French beans (chopped)                         50 gram

Green peas                                              25 gram

Paneer (indian cottage cheese)               100 gram

Ginger (chopped)                                    2 inch

Green chilli                                             2 to 3

Garlic (peeled)                                        8 to 10  

Onion (chopped)                                     1 

Tomato (chopped)                                   1 (large)

Cashew                                                   10 to 12

Cooking oil                                             5 tbsp

Fresh cream                                            1.5 tbsp

Cumin seeds                                           1/2 tbsp

Turmeric powder                                    1/3 tbsp

Red chilly powder                                  1 tbsp

Cumin powder                                        1/2 tbsp

Coriander powder                                   1/2 tbsp

Garam masala powder                            1/2 tbsp

Dry fenugreek leaves(kasuri methi)       1/2 tbsp

Salt to taste according

Recipe for mix veg

Turn on the flame and heat a pan, add oil. Add garlic, ginger, green chilly and onion mix it and fry it for 1/2 minutes add cashew fry it for a minute on medium flame stir it. Add tomato and mix it cook the tomato till it turns little soft ( 2 minutes) stir it. Take it out in the blending/ grinding jar let it cool down.

Add oil in the same pan let it heat on medium flame. Add potato, carrot, french beans and cauliflower stir it . Fry the vegetables on medium flame for 4-5 minutes. Keep stirring in between add capsicum and green peas mix it . Cook the vegetables are fried, turns off the flame. Take out the fried vegetables from the pan. Keep it aside. Turn on the flame and heat the same pan (you may add little oil. Add paneer fry it for a minute on low medium flame. Turn off the flame and take out the fried paneer in a plate. 

Close the lid of blending jar blend it into smooth paste ( do not add water). Take it out in a bowl turn on the flame, heat a pan. Add oil seeds, fry it for few seconds on medium flame. Reduce the flame to low add turmeric powder, red chilly powder mix it properly add the blending masala paste mix it well. Add cumin powder, coriander powder mix it. Cover the pan and cook it for 2-3 minutes on low flame. Open the lid and stir it add 1 glass ( approx 250 ml ) of water stir it well.

Add the fried vegetables mix it add salt to mix it well. Cover the pan and cook it on low flame till the vegetables are cooked properly, it takes approx 10-12 minutes. Open the lid and stir it add paneer , add fresh cream and stir it, add garam masala powder mix it well. Cover the pan and cook it for 1 minute on low flame . Open the lid and stir it. Turn off the flame.
Take the dry fenugreek leaves and rub it inside your palms. Sprinkle it cover the pan and leave it for 1/2 minutes open the lid stir it once before .

Serving

Mix veg is ready. Take it out in a serving bowl. Garnish it with coriander leaves. Ready to serve.
