Gobi pakora recipe (cauliflower pakora)


To make the Gobi pakoras, you will need the following ingredients:

For the pakora batter:

1 medium-sized cauliflower head

1 cup gram flour (besan)

2 tablespoons rice flour

1 teaspoon red chili powder

1/2 teaspoon turmeric powder

1/2 teaspoon cumin powder

1/2 teaspoon coriander powder

A pinch of asafoetida (hing)

Salt to taste

Prepare the Cauliflower:

Remove the leaves and separate the cauliflower into medium-sized florets.

In a mixing bowl, add gram flour (besan), rice flour, red chili powder, turmeric powder, cumin powder, coriander powder, asafoetida (hing), and salt.

Mix all the dry ingredients well.

Gradually add water to the dry mixture while whisking continuously until a smooth and thick batter is formed. The batter should have a coating consistency, neither too thick nor too thin.

Coat the Cauliflower:

Heat vegetable oil in a deep frying pan or kadhai over medium heat.

Dip each cauliflower floret into the prepared batter, ensuring it is coated evenly from all sides.

Gently shake off any excess batter before adding the floret to the hot oil. This will prevent the pakoras from becoming too oily.

Repeat the process for all the florets, and add them to the hot oil in small batches. Do not overcrowd the pan.

Fry the Pakoras:

Fry the coated cauliflower florets in hot oil until they turn golden brown and crispy.

Using a slotted spoon, remove the pakoras from the oil and transfer them to a plate lined with paper towels. This will help absorb any excess oil.

Repeat the frying process for the remaining cauliflower florets.
