Kadhai Paneer ;How to make Kadhai Paneer

 Ingredients for Kadhai Paneer

Paneer (Indian cottage cheese)                200 gram

Capsicum                                                  2

Onion                                                        3

Tomato                                                      1

Cashew                                                     6 to 8

Green chilly                                              2

Black cardoman                                       1

Coriander seeds                                       1 tbsp

Kashmiri red chilli                                  3 

Turmeric powder                                     1/3 tbsp

Red chilli powder                                    1/3 tbsp

Garam masala powder                            1/2 tbsp

Garlic cloves                                           7 to 8

Ginger                                                     1 inch

Cooking oil                                             4 tbsp

Butter                                                      1 tbsp

Dry fenugreek leaves                              1/2 tbsp

Cumin powder                                        1/3 tbsp

How to make Kadhai Paneer  

Turn on the flame, heat a pan on low flame. Add coriander seeds and dry red chilly roast it for 2 minutes on low flame. Turn off the flame and let it cool down.  Put roasted coriander and red chilly in grinding jar. Do not add water. Grind it into powder. Take it out and keep it aside.

Turn on the flame and heat a pan again add little oil. Add crushed black cardamom ( badi elaichi) . Add chilly, Chopped onion, tomato, ginger, garlic and cashew fry it for 2-3 minutes on medium flame stir it. Turn off the flame and let it cool down. Put the fried ingredients in same grinding jar. Blend it into smooth paste ( do not add water).

Turn on the flame again and heat the same pan add oil and let it heat. Put the paneer into the pan fry the paneer for 2 minutes. Take it out in a plate and keep it aside fry the ( square shape chopped capsicum and onions in the same way). Do not Fry it more than 2 minutes. Once the onions turns transparent , takr it out. 

add oil and let it heat on low flame. Add turmeric powder 1/3 tbsp, cumin powder 1/3 tbsp mix it. Add blended paste mix it well cover it and cook it for 2 minutes on low flame. Open the lid and stir it add 2 tbsp of roasted masala powder add garam masala powder 1/2 tbsp mix it well. Cook it on low flame for 2-3 minutes ( cover the pan) and open the lid and stir it.

Add 1 cup of water, and salt to taste according mix it well. Cover the pan and let it came to boil. Open the lid and stir it. Add fried paneer, capsicum and onions mix it cover it and cook it for 3-4 minutes on low flame.

Open the lid and stir it add butter and fry fenugreek leaves. Turn off the flame cover the pan and leave it for 2 minutes open the lid and stir it.. Ready to serve.
