Ingredients for bread pakoda
Bread slices (white) 12
Boiled potato 6
Gram flour ( Besan) 150 gm
ginger chopped 2 inch
Green chilli 3
Garlic ( Peeled) 8 to 10
Curry leaves 12 to 15
Coriander leaves 1/3 cup
Asafoetida (hing) 1/4 tbsp
Mustard seeds 1/3 tbsp
Cumin seeds 1/2 tbsp
Red chilli powder 1/3 tbsp
Turmeric powder 1/3 tbsp
Baking soda 1/4 tbsp
Salt to taste
Cooking oil for frying
Schezuan souce or tomato ketchup 2 tbsp
Green chutney 2 tbsp
how to make bread pakoda
In a grinder jar, add garlic, green chilli and ginger grind it into thick paste (Do not add water). Take it out in a bowl. Green chilli paste is ready. Mash the boiled potato turn on the flame. Heat a pan and add oil. Once oil is heated properly, add oil. Once oil is heated properly, add asafoetida , cumin seeds and mustard seeds fry it for few seconds on medium flame.
Add ginger, garlic and green chilli paste mix it. Add curry leaves mix it and fry it for a minute on low flame. Add mashed potato, add salt mix it properly cook it for 2 minutes on low flame. Add coriander leaves and mix it turn off the flame and let the potato cool down completely.
Take 1 bread slice and apply green chutney on it . Apply the green chutney on it. Apply the green chutney on 2 bread slice. Take another bread slice and apply schezwan chutney on it apply schezwan chutney on 2 bread slice. Put the prepared potato masala on green chutney coated bread slice. Spread it evenly.
Place the schezwan chutney coated bread on it. Cut the bread slices diagonally. Keep it aside in a plate. Stuffed bread slices are ready to make pakora. Take the gram flour in a bowl and add baking soda ti it add red chilli powder. Add turmeric powder mix it well. Add water and make a thick batter add little water at a time. Make the batter consistancy like this. Add little salt and mix it batter is ready.
Turn on the flame heat oil for frying ( Drop 1-2 drops of batter to check the temperature of oil). Take it out from the oil reduce the flame to medium dip the stuffed bread from both sides in the batter properly. Coat the bread properly with batter. Gently put it into hot oil fry it medium flame. Put hot oil on the top of pakora to set the upper layer.
Gently flip it fry it from both the sides till it turns golden once the bread pakora is fried properly take it out on the kitchen towel. Repeat the process to fry remaining pakora. Fry it on medium flame till it turns golden from both the sides. Take it out on th kitchen towel bread pakora is ready (You may cut it like this before serving).Serve in hot with green chutney and tomato ketchup.
Ingredients for red and green chutney
Red chutney
Garlic (Peeled) 25 gm
Onion (Small) 1
White vinegar 1 tbsp
Dry red chilli 3 to 4 (Soaked in water for 30 minutes)
Salt 1/2 tbsp
Red chilli powder 1/4 tbsp
Sugar 1/2 tbsp
How to make red chutney
Put all the ingredients in a grinder jar, dry red chilli with soaked water,white vinegar, garlic, onion, salt,sugar and red chilli powder close the jar. Blend it into smooth paste.Like this. Red chutney is ready to serve.
Green chutney
Green chilli 2 to 3
Garlic cloves 10 to 12
Coriander leaves 1/2 cup
Salt 1/2 tbsp
Tomato (Chopped) 1 small
Lemon juice 1 tbsp
How to make green chutney
Put all the ingredients in a grinder jar, chopped tomato,green chilli,coriander leaves, garlic cloves,lemon juice and salt. Close the jar. Blend into smooth paste. Like this. Green chutney is ready.
