Chole Bhature Recipe How to make chole bhature at home


Ingredients for Bhatura

Purpose flour(maida)               500gram
(Save 50gram maida and use the rest 4 cups of flour to prepare the daugh)
Oil                                             2 tbsp
Sugar                                         1 tbsp
Baking soda                              1 tbsp
Salt                                            1 tbsp

Now this is our boiled chickpeas(chole)

 Tomato                             500gram
Ginger                               2 inch
Green chilli                       2-3
Cottage chees(paneer)       200 gram
Chopped green coriander   3-4 tbsp
Curd                                   4 tbsp
Oil                                       4 tbsp
Hing                                    1 pinch
Cumin                                  1 tbsp
Garam masala                      1 tbsp
Pomegrate seeds                  1-5 tbsp
Coriander powder                2 tbsp
Red chilli powder                1/2 tbsp
(If you like it spicy then you can add more chilli powder)
Salt                                       1 tbsp

How to make chole

We are using boiled channas. Take 2 cup of channa wash and soak it for 8-10 hours. Again wash the channas and put it in the cooker. To cooker add 2 tbsp of salt, 2 teebags, 3/4 tbsp baking soda and 4 cups of water. After a whistle from cooker,well cook the channa on low flame for 5-6 minutes.
Take out the channa from the cooker when all the preasure release from it.

To prepare chole we need to prepare the spices. Slice the tomato and big pieces so that it  can be ground easily in the mixer. Chopped the green chillies into 1/2 pices peel the ginger and slices it into big pieces. Wash and  dry the required the vegetables in advance. The rest of the ginger we will slice them into long pieces.

Now we will grind the spices. Put all the slices ingredients into jar and grind them finally tomato masala is ready and now we will prepared the chole.Heat the pan and pour and oil to the oil add cumin,pomegrante seeds, asafoetida powder(hing), coriander powder and soute all the spices. Now we will add the tomato masala into the pan.

Soute the spices until oil separates and form a layer stir the ingredients every 1 to 2 minutes. Cut the left over 1inch ginger into long pices add ginger to the souted in ingredients. Dice the cottage cheese into a size of 1 cm cube. The oil has now started floating over the mixture.

Sauted spice is finally ready. now add 2 cup of water to the pan. You can adjust the quantity of water according to your choice. If you want a cancentrated gravy then add less amount of water. Add salt and red chilli powder mix then and close it with a lid so that the gravy boils easily. 

To prepare a tasty chole we need to suate the spices nicely it should neither be row more it should be over cooked. So we need to sauted the spices on low medium flame by stirring it continuosly. We need to give special attention while sauteing the spices. The gravy has starting boiling and now we will add the boiled chole.

Add garam masala and  cottage cheese mix all ingredients. If you want you can fry the cottage cheese. If the cottage cheese is fresh then you dont need to fry and they will really tasty. Add coriander leaves and cover it.

Cook until the spices blend well with channa and cottage cheese after 4 minutes the chole is finally ready. Turn off the flame and transfer the chole to be a bowl. Garnish the chole with copped coriander leaves.

How to make bhature

To prepare the chole bhature we will have to prepare the dough. Since we need to keep the daugh for 2 hours. Make a well in the flour and add sugar , baking soda and salt. mix all ingredients in the bowl. now add 2 tbsp oil mix all ingredients throughly. Now with the help of lookwarm water we will prepare the daugh .

Pour a little bit of look warm water to the bowl and need athe daugh. The daugh is ready and now pour a few drops of oil to the hands. Now need the daugh for 5 to 6 minutes until it becomes smooth this is very important ass the sugar that (we have added to the flour must mix well so that we cannot feel it)

The daugh must be really smooth. If the dough is not needed well then the bhatura will not be tasty enough. So the first step is to prepare a soft and smooth daugh. Make sure that the daugh is not really hard as well as not to thin.

 We need to prepared the daugh some as we prepare for chappatis and paranthas. Smooth dough is finally ready(The dough now feels realy smooth and we cannot feel the presence of th sugar in the dough). As we touch the dough it raises backed to normal shaped.

Put the daugh with little bit of oil to ptrepare the dough we have used one cup of water. Cover the daugh and it keep in a warm place for 2 hours. The dough will rice then and we will prepared the bhatura.

The dough is finally risen after 2 hours and now we will prepared the bhatura. Apply dry flour on your palm and slightly press the dough. Now we will prepare the dough balls. Apply dry flour on you palm and roll small balls of dough. Make a dough balls equivalent to the size of a small guava.

The dough balls and keep it aside the dough balls are ready and now we will roll them using rolling pin. Take a daugh ball, blind with the flour and roll them into oval shape. Bhatura we required very hot oil. Drop a small piece of daugh into the oil and check with ever it gets fried or not the dough has now started floating on the surface of the oil.

That means oil is hot enough. Now fry the bhatura in oil by slightly pressing it. Flip the bhatura as soon as it wells up fry the bhatura until it turns golden brown from both the sides fry rest of the bhaturas like wise by slightly pressing them. We can prepare around 12-14 bhaturas. Tasty bhature is finally ready and it is really easy to prepare then.
